Flash Pasteurisation is a delicate and a highly sophisticated technical process where wine is held for 30 seconds at a temperature up to 80 degrees C and then taken back to normal temperature "in a flash". This process is most often used to make wine kosher for Jewish consumption. It is known to improve aroma and shelf stability, enhance aspects of flavour and removes lacase.
